Macro-Friendly Peanut Butter Protein Cookies

Equipment

  • 2 small mixing bowls
  • 2 small mixing spoons or spatulas (I love these ones)
  • 1 Cookie sheet I love my Caraway Home cooking sheets - no need for cooking spray or parchment paper!
  • 1 whisk
  • 1 Cookie scoop

Ingredients
  

  • ½ cup powdered peanut butter
  • ¼ cup water
  • ¼ cup lite maple syrup
  • ¼ cup natural peanut butter
  • 1 tsp vanilla
  • cup oat flour
  • 2 tbsp vanilla peanut butter protein powder (Transparent Labs is the best)
  • 1 tsp baking powder
  • sea salt flakes

Instructions
 

  • Preheat oven to 350F, and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together half of the peanut butter powder and the water. Then add maple syrup, creamy peanut butter, and vanilla, whisking until combined.
  • In a small bowl, use a spatula to mix together oat flour, the rest of the peanut butter powder, protein powder, and baking powder.
  • Add the dry ingredients to the wet and mix until a soft dough forms.
  • Using a cookie scoop, a tablespoon, or your hands, roll the dough into balls about 1.5 tbsp in size. Flatten each ball with the back of a fork in a criss-cross pattern.
  • Bake for 8-9 minutes or until browned.

Notes

These bake quickly! Keep a close eye on them so that they don’t overcook.
