Equipment

  • 1 Blender
  • Measuring cups
  • 1 Small bowl

Ingredients

  • 1 mini graham cracker crust
  • ¼ cup cottage cheese
  • ½ cup Greek yogurt
  • 1 tbsp sugar-free cheesecake pudding mix
  • cup strawberries OR any kind of berries you’d like -fresh or frozen

Instructions

  • Add your yogurt, cottage cheese, and cheesecake JELLO mix into your bowl and either stir briskly until well combined, mix into a blender, or whip together using a hand mixer. If you don’t like the texture of cottage cheese, blending your cheesecake mixture will help make it smooth!
  • Spoon your mixture into a mini cheesecake crust and smooth it out. There should be plenty of cheesecake for it to more than fill your crust.
  • Top your mini cheesecake with whatever toppings you’d like. We love to use fresh or frozen berries for flavor and fiber, but there are tons of ways to personalize your cheesecake!
