Equipment

  • 1 Large glass baking dish
  • 1 Large nonstick pan
  • 1 Cooking utensils
  • 1 Cutting board and knife

Ingredients
  

  • 1 15 oz. Can pizza sauce, divided
  • 3 medium Zucchinis
  • 1 lb Ground pork
  • 1 tbsp Italian seasoning
  • 1 tsp Red pepper flakes
  • 1 cup Shredded mozzarella cheese
  • Salt & pepper to taste
  • Optional toppings: fresh basil, grated parmesan cheese, red pepper flakes

Instructions
 

  • Preheat the oven to 350 degrees. Pour 1/2 cup pizza sauce in a large glass baking dish.
  • Cut bottom and top off the zucchini and then cut in half lengthwise. Using a spoon, scoop out the center of the zucchini halves. Place the boats flesh side up in the glass baking dish.
  • Place a large non-stick pan over medium heat. Add in ground pork, breaking it up with a spoon. Cook for 4-5 minutes until browned. Add in remaining pizza sauce, Italian seasoning, red pepper flakes, and salt and pepper. Stir to combine and remove from heat once combined.
  • Stuff the zucchini boats with the sausage mixture, dividing it up evenly. Sprinkle the boats with mozzarella cheese. Cover the pan with foil and bake for 30 minutes until the zucchini is cooked through. Remove from the oven and top with optional toppings. Enjoy!

Notes
