Equipment

  • 1 Large mixing bowl
  • 2 Mixing spoons
  • Measuring cups and spoons
  • 1 Large Pot
  • 1 Veggie chopper or cutting board + knife
  • 1 Soup ladle

Ingredients
  

For the meatballs

  • 1/2 lb lean ground turkey
  • 1/2 lb lean ground chicken
  • 1/4 cup whole wheat breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

For the soup

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 1 cup whole wheat orzo pasta
  • 4 cups fresh spinach, chopped
  • salt & pepper, to taste
  • fresh basil leaves for garnish optional

Instructions
 

For the meatballs:

  • In a large mixing bowl, combine the ground turkey, ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, salt, pepper, and garlic powder.
  • Mix the ingredients until well combined. It's best to use your hands for this.
  • Form the mixture into small meatballs, about 1 inch in diameter. You should get approximately 24 meatballs.

For the soup:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes or until the vegetables begin to soften.
  • Pour in the chicken broth and bring it to a simmer.
  • Gently add the meatballs to the simmering broth. Cook for 10-12 minutes or until the meatballs are cooked through and no longer pink in the center.
  • Stir in the whole wheat orzo pasta and continue to simmer for 8-10 minutes or until the pasta is al dente.
  • Add the chopped spinach to the soup and cook for an additional 2-3 minutes until it wilts.
  • Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  • Serve hot, garnished with fresh basil leaves if desired.
  • Enjoy!

Notes

Serving size is about 393g. For the most accurate measurement, weigh your entire recipe after cooking in grams (less the weight of the pot) and divide that number by 6.
